| Method - BBQ Sauce |
- Sweat onions, garlic and ginger in oil until aromatic.
- Add remaining ingredients whisking well. Simmer gently
10-15 minutes.
- Season with salt and pepper to taste.

| Method
- Spice Mix |
- Combine all spices and mix well.

| Method
- Cooking Ribs and Chicken (Prehear oven 375°) |
- Season ribs and chicken well with spice mix, let sit from
1 hour to overnight.
- Grill ribs and chicken on both sides, place on rack skin
side up on foil-lined sheet trays.
- Place in 375°F oven for 10-15 minutes. Baste generously
with BBQ sauce on all sides. Return to oven to caramelize.
(Approx. 20-30 mins.) Baste with sauce frequently. When
juices run clear, (165-170°) remove from oven, cut between
rib bone and cut legs from thighs of chicken. Hold warm
for service.
