Ingredients Amounts
Babyback ribs 2 slabs
Chicken, fryer/roasted 1 ea. (3 lbs.)
Barbecue sauce (Homemade) 1 recipe follows
BBQ spice mixture (dry rub) 1 recipe follows
Ingredients - BBQ Sauce Amounts
Oil, vegetable 1/4 cup
Onions, small dice 1/2 cup
Garlic, minced 2 cloves
Ginger, minced 1/2 Tbsp.
Ketchup, Heinz 14 oz. (1 btl.)
Light brown sugar 3/4 lb.
Cider vinegar 1/2 cup
Dry mustard 1/2 oz. (weight)
Worcestershire sauce 1/2 oz. (vol.)
Salt to taste
Fine Ground Black Pepper to taste
Cayenne pinch
   
Method - BBQ Sauce
  1. Sweat onions, garlic and ginger in oil until aromatic.
  2. Add remaining ingredients whisking well. Simmer gently 10-15 minutes.
  3. Season with salt and pepper to taste.
Ingredients - BBQ Spice Mix Amounts
Paprika (sweet not hot) 1/2 cup
Chili powder 1/4 cup
Salt 1/4 cup
Ground cumin 1/2 Tbsp.
Sugar 1/4 cup
Dry mustard 2 Tbsp.
Black pepper 1 Tbsp.
Dried thyme 2 Tbsp.
Dried oregano 2 Tbsp.
Curry powder 1/2 Tbsp.
Cayenne pepper 1 tsp.
   
Method - Spice Mix
  1. Combine all spices and mix well.
Method - Cooking Ribs and Chicken (Prehear oven 375°)
  1. Season ribs and chicken well with spice mix, let sit from 1 hour to overnight.
  2. Grill ribs and chicken on both sides, place on rack skin side up on foil-lined sheet trays.
  3. Place in 375°F oven for 10-15 minutes. Baste generously with BBQ sauce on all sides. Return to oven to caramelize. (Approx. 20-30 mins.) Baste with sauce frequently. When juices run clear, (165-170°) remove from oven, cut between rib bone and cut legs from thighs of chicken. Hold warm for service.
