Yield: 6 portions
Ingredients Amounts
Butter 1 oz.
Olive Oil or rendered bacon 3 oz.
Onions, diced 6 oz.
Garlic, minced 1 oz.
Carrots, coarsely grated 3 oz.
Celery, coarsely grated 3 oz.
Beef, coarsely ground 8 oz.
Pork, coarsely ground 8 oz.
Veal, coarsely ground 8 oz.
Tomato paste 3 oz.
Tomato concassé 6 oz.
Red wine, dry 8 oz.
Salt 1 tbsp.
Ground back pepper 1/2 tsp.
   
Method
  1. Heat the butter, oil or rendered bacon over moderate heat. Add onions and garlic and sauté until lightly brown.
  2. Increase the heat and add the carrot, celery and ground meats. Cook until meats are crumbled and lightly brown.
  3. Add the tomato paste, tomato concassé and red wine. Simmer over low heat for about 45 minutes. Add broth or stock throughout the cooking period to maintain correct consistency. Season with salt and pepper.
