| Tomato and Basil Coulis |

| Shallots, minced |

| Garlic cloves, mashed to paste |

| Tomato paste |
2 Tbsp. |
| Tomato concasse |

| Chicken stock |
8 oz. |
| Standard Sachet d'Epices |
1 ea. |
| Red wine vinegar |
2 Tbsp. |
| Basil, chopped |
2 Tbsp. |
| Salt and pepper |
to taste |
| Sugar |

| Method |
- Sauté shallots, garlic, and tomato paste in oil
and butter.
- Add tomato concasse, stock, and sachet; simmer for 20
minutes.
- Remove sachet and puree the tomato mixture.
- Add vinegar and basil.
- Adjust seasoning to taste with salt, pepper and sugar.
