Yield: 1 cup
Ingredients Amounts
Olive oil 1 Tbsp.
Butter 1 Tbsp.
Shallots, minced 4 ea.
Garlic cloves, mashed to paste 2 ea.
Tomato paste 2 Tbsp.
Tomato concasse 1 lb.
Chicken stock 8 oz.
Standard Sachet d'Epices 1 ea.
Red wine vinegar 2 Tbsp.
Basil, chopped 2 Tbsp.
Salt and pepper to taste
Sugar 1/2 tsp.
   
Method
  1. Sauté shallots, garlic, and tomato paste in oil and butter.
  2. Add tomato concasse, stock, and sachet; simmer for 20 minutes.
  3. Remove sachet and puree the tomato mixture.
  4. Add vinegar and basil.
  5. Adjust seasoning to taste with salt, pepper and sugar.
