Yield: Makes 4
Stuffed corned beef, Swiss cheese, and pickles into pocket bread for this fun filled sandwich.
 
Tools  
Table knife  
Kitchen scissors  
   
Ingredients Amounts
Pita bread rounds 2 large
Very thinly sliced corned beef 2 2 ½ -ounce packages
Swiss cheese 4 slices
Lettuce leaves 4
Dill or sweet pickle slices 8
Thousand Island salad dressing  
   
Method
  1. Use the kitchen scissors to cut each pita in half crosswise (so you have four half circles).
  2. With the table knife, spread the inside of each pita pocket with Thousand Island salad dressing.
  3. Put some corned beef in each pocket. Tear the Swiss cheese into pieces to fit each pita pocket. Add cheese, lettuce leaves, and pickle slices to each pocket.
