| Chinese Fried Rice |

| Rice, boiled |

| Scallions, minced |

| Salt |
3/4 tsp. |
| Eggs |

| Soy sauce |
1 1/2 Tbsp. |
| Parsley leaves, Chinese, minced |

| Method |
- Heat oil in a heavy skillet.
- Toss in boiled rice.
- Add scallions and salt.
- When these ingredients are well mixed, hollow a center
in the rice. Break 3 eggs into the hollow and scramble semi-cooked,
then stir them into rice mixture.
- Sprinkle with soy sauce and parsley leaves.
