Yield: 12 tortillas
   
Ingredients Amounts
Jicama, peeled, julienne 3 ea.
Macintosh, Cortland or similar apples medium dice (unpeeled) 3 ea.
Cantaloupe, medium dice 1 ea.
Orange juice (fresh only) 1 Cup
Pure olive oil 2 oz.
Chile de arbol 3 ea.
Salt To taste
Fresh cilantro, chopped 4 Tbsp.
   
Method
  1. Take out the seeds of the chiles de arbol. Place them on a sheet pan and LIGHTLY toast them with no color under the broiler. Cut them very thin and reserve.
  2. Combine all the ingredients in a mizing bowl. Toss lightly and check the seasonings.
