| Jicama, peeled, julienne |

| Macintosh, Cortland or similar apples medium
dice (unpeeled) |

| Cantaloupe, medium dice |

| Pure olive oil |

| Chile de arbol |

| Fresh cilantro, chopped |

| Method |
- Take out the seeds of the chiles de arbol. Place them on a sheet
pan and LIGHTLY toast them with no color under the broiler. Cut them
very thin and reserve.
- Combine all the ingredients in a mizing bowl. Toss lightly and check
the seasonings.
