| Olive oil |

| Onions, small dice |

| Garlic clove, chopped |

| Plum tomatoes, canned |
6 cup |
| Tomatoes puree |
2 cup |
| Bay leaf |
1 ea. |
| Salt and pepper |
to taste |

| Method |
- Pass the canned tomatoes through a food mill with the
small die.
- Sweet the onions in the oil until tender, add the garlic
and sweat until tender.
- Add the tomatoes, puree and the bay leaf and simmer for
45 - 60 minutes. (the sauce is finished when the acidity
is cooked out)
- Season to taste.
