Yield: 2 qt.
Ingredients Amounts
Olive oil 2 oz.
Onions, small dice 4 oz.
Garlic clove, chopped 3 ea.
Plum tomatoes, canned 6 cup
Tomatoes puree 2 cup
Bay leaf 1 ea.
Salt and pepper to taste
   
Method
  1. Pass the canned tomatoes through a food mill with the small die.
  2. Sweet the onions in the oil until tender, add the garlic and sweat until tender.
  3. Add the tomatoes, puree and the bay leaf and simmer for 45 - 60 minutes. (the sauce is finished when the acidity is cooked out)
  4. Season to taste.
