Yield: 4 portions
Ingredients Amounts
Oil, cooking 1/4 cup
Rice, boiled 3 cup
Scallions, minced 4 ea.
Salt 3/4 tsp.
Eggs 3 ea.
Soy sauce 1 1/2 Tbsp.
Parsley leaves, Chinese, minced 1/4 cup
   
Method
  1. Heat oil in a heavy skillet.
  2. Toss in boiled rice.
  3. Add scallions and salt.
  4. When these ingredients are well mixed, hollow a center in the rice. Break 3 eggs into the hollow and scramble semi-cooked, then stir them into rice mixture.
  5. Sprinkle with soy sauce and parsley leaves.
