Yield: 20 portions
Ingredients Amounts
Dumpling Skins* :  
Flour 1 lb
Water, hot 8 fl oz.
* Prepared wonton wrappers can be used instead of preparing the dough, if desired.  
Filling:  
Ground pork 12 oz
Chinese Cabbage, shredded 8 oz
Chopped Scallions 2 oz
Minced Ginger 1 tsp
Soy Sauce 1/2 fl oz
Dark Sesame Oil 1/2 fl oz
Egg white 1 each
Salt as needed
White pepper as needed
   
Method

To make the dough:

1. Mix the flour and water to make a smooth batter.

2. Let stand for 30 minutes.

3. Divide the dough into 1/2 oz portions and roll each one out into a thin circle.

To make the dim sum:

1. Combine all the filling ingredients and mix well. Check the consistency and seasoning of the filling by sauteing a small amount and tasting it. (Ask an adult for help)

2. Place approximately 1 Tbsp. of filling on a dumpling skin. Crimp and seal the edges tightly.

3. Steam the dumplings over boiling water until cooked through, about 8 minutes.

4. Serve immediately.
