To make the dough:
1. Mix the flour and water to make a smooth batter.
2. Let stand for 30 minutes.
3. Divide the dough into 1/2 oz portions and roll each one out into a thin circle.
To make the potstickers:
1. Combine all the filling ingredients and mix well. Check the consistency and seasoning of the filling by sauteing a small amount and tasting it. (Ask an adult for help)
2. Place approximately 1 Tbsp. of filling on a dumpling skin. Crimp and seal the edges tightly.
3. Heat about 1/4 in. oil in a skillet. Add the dumplings in a single layer, and pan-fry until the bottoms are very crisp and brown.
4. Add enough stock, broth, or water, to come up to 1/2 in. in the pan.
5. Cover the pan and steam the potstickers for 6-8 minutes, or until the wrapper is translucent and tender.
4. Serve immediately.
