It won't take long before you find plenty of ways to indulge in this light and refreshing spread. Tzaziki is a traditional accompaniment to falafel.

Ingredients Amounts

English Cucumber, coarsely grated

1 each
Kosher Salt 1 tsp
Plain Yogurt 1 cup
Yogurt Cheese (recipe) 1 cup
Chopped Fresh Mint (or 2 tsp dried mint) 2 Tbsp
Minced Garlic, pureed in a mortar 1/4 to 1/2 tsp
Fresh Lemon Juice to taste
Salt to taste (optional)
   
Method

Combine the cucumber and salt in a colander and let it drain for 15 minutes. Squeeze out the excess moisture.

Put the cucumber in a mixing bowl and stir in the yogurt, yogurt cheese, garlic, mint, and lemon juice.

Adjust the seasoning with salt if necessary.
