Yield: 3 mini loaves
Ingredients Amounts

Vegetable oil

1 ¼ cup
Granulated sugar 1 ½ cup
Banana, over-ripe, mashed 1 ¼ cup
Egg 3 ea.
Water ½ cup
   
Flour, all-purpose 1 ¾ cup
Salt ¼ tsp
Baking powder ¼ tsp
Baking soda ½ tsp
   
Macadamia nuts, chopped
½ cup
Flour, all-purpose 1 Tbsp.
Pineapple, crushed, drained 1 ¼ cup
   
   
Method
  1. Thoroughly mix oil and sugar together.
  2. Add bananas, eggs and water.
  3. Sift flour, salt, baking powder and soda together. Blend into banana mixture; do not over mix.
  4. Coat nuts with flour, then add to batter along with pineapple.
  5. Pour into lightly greased and parchment lined mini loaf pans.
  6. Bake in 350°F oven for about 1 hour or until firm.
