Yield: 4 Portions
Ingredients Amounts
Chicken pieces 2 ½ lb.
Ketchup 1/6 cup
Soy sauce 1/6 cup
Brown sugar ¼ cup
Sherry or chicken stock 1 ½ Tbsp.
Ginger root, crushed ½ piece
Garlic clove, crushed ½ ea.
   
Method
  1. Arrange chicken, skin side up, on the rack of a broiler pan. Broil 6 - 8 inches from heat browning each side.
  2. Meanwhile, combine remaining ingredients.
  3. Remove chicken and baste with sauce. Continue to broil for 10 or more minutes on each side, basting frequently with sauce, until cooked.

Note: This is the Hawaiian version of barbecued chicken. The chicken is traditionally grilled. Huli huli means "to turn" in Hawaiian and refers to turning the chicken on the grill. Country-style, baby back or pork spare ribs may also be used.
