Ingredients Amounts
   
Meatballs  

Ground beef, lean

1 lb.
Celery, minced ¾ cup
Almonds, chopped ¼ cup
Garlic clove, minced 1 ea.
Salt 1 tsp.
Pepper, black ½ tsp.
Soft bread crumbs ½ cup
Soy sauce 1 tsp.
Eggs, slightly beaten 2 ea.
Vegetable oil, for frying 2 Tbsp.
   
Sauce  
Chicken stock 1 cup
Sugar ½ cup
Cornstarch 3 Tbsp.
Vinegar ½ cup
Soy sauce 2 Tbsp.
Pineapple juice, reserved from chunks ½ cup
Pineapple chunks 8 oz. can 1 ea.
Green pepper, chopped 1 ea.
   
Method
  1. In a large bowl, thoroughly mix all ingredients for meatballs, then form into 1-inch balls.
  2. Brown meatballs on all sides, in heated oil. Drain on paper towels.
  3. In a saucepan, combine stock, sugar, cornstarch, vinegar, soy sauce and pineapple juice. Stir, over medium heat, for 3 minutes or until thickened.
  4. Add pineapple chunks, green pepper and meatballs. Simmer for 15 minutes or until heated through.
