- Thoroughly mix oil and sugar together.
- Add bananas, eggs and water.
- Sift flour, salt, baking powder and soda together. Blend into
banana mixture; do not over mix.
- Coat nuts with flour, then add to batter along with pineapple.
- Pour into lightly greased and parchment lined mini loaf pans.
- Bake in 350°F oven for about 1 hour or until firm.
