- Boil unpeeled sweet potatoes until tender, about 25 minutes.
Cool, peel and slice
1 ½-inch thick.
- In large sauté pan, melt butter. Stir in brown sugar
and water. Cook on medium heat about 5 minutes.
- Lower heat and add sweet potatoes. Toss gently, coating potatoes
with glaze.
- Sprinkle with coconut before serving.
