Yield: 6 Portions
Ingredients Amounts
Shrimp, large, raw, peeled 24 ea.
All-purpose flour ½ cup
Eggs 2 ea.
Coconut, shredded 3 cup
Vegetable oil, for frying 24 oz. or as needed
   
Method
  1. Set up separate containers for flour, eggs and coconut. Dip shrimp in flour, then eggs and finally, roll in coconut, covering thoroughly.
  2. Heat enough oil, which will cover the shrimp, in a deep pan. The oil should be 375°F. (Ask an adult for help. Caution Hot Oil Can Splatter.) Deep fry shrimp until golden brown. Drain on paper towels.

Note: May be served with cocktail sauce, with crushed pineapple added to taste.
