Yield: 8 portions
Ingredients Amounts
Sweet potatoes, medium 4 - 5 ea.
Butter ½ cup
Brown sugar 1 cup
Water ½ cup
Coconut, shredded ¼ cup
   
Method
  1. Boil unpeeled sweet potatoes until tender, about 25 minutes. Cool, peel and slice 1 ½-inch thick.
  2. In large sauté pan, melt butter. Stir in brown sugar and water. Cook on medium heat about 5 minutes.
  3. Lower heat and add sweet potatoes. Toss gently, coating potatoes with glaze.
  4. Sprinkle with coconut before serving.
