Ingredients Amounts
Buffalo  
Buffalo Top Round, Trimmed & Cubed * 2 1/4 lbs.
 
Indian Marinade  
Lowfat Yogurt 4 ounces
Onion, diced 3 ounces
Fresh Ginger, minced 3/4 ounce
Garlic, minced 3 Tbsp.
Cumin Seeds, toasted, ground 1 tsp.
Crushed Black Peppercorns 1 tsp.
Nutmeg, ground 1/2 tsp.
   
Method

1. Thread 3 1/2 ounces of the meat onto an 8-inch skewer. Repeat with remaining meat to make 10 skewers.

2. Combine the marinade ingredients in a deep half hotel pan. Add the skewers, turning to coat evenly. Marinate under refrigeration for 24 hours.

3. For each serving: Grill 1 skewer to the desired doneness, about 6 minutes for medium-rare.
