Curry powders ar emixtures of various combinations of ground spices, originally of indian origin; curry refers to the sauce-based dishes they are used to prepare. Depending on the origin and compostion of the curry powder, curries can range from sweet and mild to sweet and moderately hot or pungent and very hot.
1. Cut chicken into 1inch chunks. Pour lime juice over chicken, then rinse off.
2. Drain the chicken, season with curry, onion, thyme, garlic, pepper, and salt. Rub the seasonings into the chicken and then set aside for 10-15 minutes.
3. Heat the oil in a pan and add the sliced onion. Cook until onion becomes soft but not caramelized.
4. Add the chicken and continue cooking until chicken is done.
