Plantains are a relative of the banana, but are bigger, less sweet and need to be cooked before they are eaten. Plantains also keep their shape when cooked, unlike bananas, which get mushy.
Green Plantains
1. Peel the plantains. Slice thin by hand or on a mandoline. Blot them dry before cooking.
2. Heat the oil and fry the plantains until they are very crisp.
3. Drain well and blot on absorbent paper towel. Season with salt and pepper, and sprinkle with lime juice, if desired. Serve hot.
