Yield: 2 cups
Ingredients Amounts

Chicken Broth

1 1/2 cups
Tamari Sauce 2/3 cup
Sugar 1/3 cup
Mirin (sweet rice wine) 3 tablespoons
Minced Green Onions 3 tablespoons
Minced Ginger 2 teaspoons
Minced Garlic 2 teaspoons
Sake 3 tablespoons
Rice Vinegar 1 tablespoon
Cornstarch (dissolved in 1 tablespoon cold water) 2 teaspoons
 
Methods:

1. Simmer the stock, tamari, sugar, mirin, onions, ginger, and garlic until well-flavored, about 15 minutes.

2. Add the sake and vinegar to the sauce, return to a simmer, and add the dissolved cornstarch. Simmer for another 2 minutes. The sauce should coat the back of a spoon. Keep the sauce warm.
