Many people think of Louisiana cooking as mixture of the Cajun and Creole dishes that are especially popular in the southern part of the state. While these two cooking styles have many differences, they also have a few basic similarities. Whether you are eating Cajun or Creole cuisine, rice will often accompany or be a part of the meal. Many dishes will also start with a roux. A roux is the mixture of flour and fat which is used to thicken gumbos, étouffées, and sauces. There are three basic variations of a roux: blonde, medium, and dark. Other common ingredients include a variety of seafood, okra, pecans, homemade sausage, and beans.

Louisiana cooking varies a bit in the Northern part of the state. Here you'll find more traditionally "Southern" cooking with less "kick". Meals often include foods like biscuits, chicken and dumplings, cornbread, and green beans.
