Makes 12 muffins

Ingredients Amounts

Yellow Cornmeal

1 cup
All-Purpose Flour 3/4 cup
Sugar 3 tablespoons
Baking Powder 2 1/2 tsp
Salt 1 tsp
Eggs 2 large
Milk 1/4 cup
Vegetable Oil 1/4 cup
 
Method

Preheat the oven to 350°F. Line a muffin tin with paper liners.

Mix together the cornmeal, flour, sugar, baking powder, and salt.

In a separate bowl, whisk together the eggs, milk, and oil until blended. Add the wet ingredients to the dry ingredients and combine until just mixed.

Spoon the batter into the prepared muffin tin, filling about 2/3 full, and bake until the surface is golden brown and springs back when lightly pressed with your fingertip, 18-20 minutes.

Let the muffins cool in the pan for about 10 minutes removing from the pan.

Serve them warm.
