Yield: Serves 5 people
Ingredients Amounts
Salsa Fresca, warm (see recipe) 5 fluid oz.
Corn Tortillas, warm 5 ea.
Eggs, fried 10 ea.
Monterey Jack or Cheddar Cheese, grated 2.5 oz / 75 g
Sour cream as needed for serving
Cilantro, chopped as needed for serving
Refried beans 5 oz.
   
Method

1. Spoon some salsa over each corn tortilla.

2. Top with 2 fried eggs and Monterey Jack (or Cheddar) cheese.

3. Garnish with sour cream and cilantro.

4. Serve right away, with refried beans.
